MISO EGGPLANT

Ingredients

  • 1-2 Eggplant

  • 1 TBSP Yuzu Chili Miso/ Chickpea miso

  • 1 TBSP Sake or water

  • 1 TBSP Vinegar

  • 1 tsp Sweetener( liquid type is better such as maple syrup/ honey/ agave syrup)

  • 1 tsp Grated ginger(optional)

Instructions

  1. Slice eggplant in about half inch

  2. Mix all other ingredients

  3. Saute eggplant with some oil until golden colour on both sides

  4. Turn the heat off then add sauce
