SHIO KOJI|CHIVE SALT KOJI
Shio(salt) Koji is an active enzyme marinade / umami salt puree
Chive Salt Koji is a Shio Koji based umami condiment / marinade
Simply add to any dishes or use as a marinade!

Enzymes in koji tenderize the protein and enhance umami flavour!!
How much to use
About 10% of the weight of the material.
EX)
・1 lb Poultry, Meat or Fish
・2~3 TBSP Chive Salt Koji or Shio-Koji
How to prepare
Poultry or meat : Cut into small size or not cut, poke with fork a few places.
Fish : Slice in fillet size
Marinate protein with Shio-Koji or Chive Salt Koji for at least 30 minutes up to a couple of days in a refrigerator.
How to cook
Pan fry : Medium heat, 5 minutes or until it gets brown color on the bottom. Turn over, reduce the heat to low and put a lid on for 5-10 minutes or until fully cooked.
Air fryer / Oven : 385F for about 30-45 minutes (poultry and meat), for about 15-25 minutes(fish)
