CHICKEN RICE
(Shio Koji / Chive Salt Koji / Yuzu Kimchi Koji)
Ingredients
1 cup Jasmine rice or short grain rice
1 cup Water
1 Shio-koji , Chive Salt Koji or Yuzu Kimchi Koji marinated chicken breast or thigh
Instructions
Rice cooker
Rinse the rice
Put rice and water and chicken on top in a rice cooker
Cook
Open the lid and fluff the rice and chicken
Sprinkle some green onion, nori seaweed and chili flakes if desired
Pot
Rinse the rice
Soak rice and water in a pot for 30 minutes
Place chicken on top of rice and water and put a lid on
Bring it to boil
Turn the heat to low and simmer for 15 minutes
Turn off heat and leave it on the element for 5 minutes
Open the lid and fluff the rice
Sprinkle some green onion, nori seaweed and chili flakes if desired
***Do not open the lid while it’s cooking
