Yuzu Kimchi Koji Kimchi with Napa Cabbage

Ingredients

  • 2 cups Napa cabbage

  • 1/2 tsp salt

  • 2~3 TBSP Yuzu Kimchi Koji

  • 1/4 cup Carrot(optional)

  • 1/4 cup Daikon or radish(optional)

  • 1/4 cup Green onion(optional)

  • Little bit of ginger(optional)

Instructions

  1. Cut napa cabbage into small pieces and rinse

  2. Sprinkle salt, lightly knead napa cabbage and let it sit at least for 30 minutes

  3. Squeeze out excess water

  4. (optional) Sengiri(thin strips) carrot, daikon, green onion and ginger, put all in a small bowl

  5. (optional) Sprinkle a pinch of salt, lightly knead and let it sit at least for 30 minutes

  6. (optional) Squeeze out excess water

  7. Mix napa cabbage, (other veggies) and add Kimchi Koji 2~3 TBSP and mix well

  8. Eat right away or press into a clean jar

  9. Keep it in a fridge
