3 steps. SHIITAKE MUSHROOM PICKLE
Ingredients
1 cup Dried shiitake mushroom (fresh shiitake will be mushy and soggy, highly recommended to use dried ones)
1 cup Water (for soaking dried shiitake mushroom)
1/4 cup Vinegar of your choice (I used balsamic vinegar)
1/4 cup Soy sauce
2-3 Tbsp Sweetener of your choice (I used brown sugar)
3-5 Sliced ginger(optional)
1-2 Whole chili(optional)
Instructions
Soak shiitake mushroom in water for overnight.
Put all the ingredients in a pot including the liquid that soaked mushroom. (slice mushroom if you want)
Bring it to boil and simmer for 15 min and let it cool.
NOTE
Great topping for ramen!
Leftover pickled brine can be used again for other pickling or for sushi rice!
