3 steps. SHIITAKE MUSHROOM PICKLE

Ingredients

  • 1 cup Dried shiitake mushroom (fresh shiitake will be mushy and soggy, highly recommended to use dried ones)

  • 1 cup Water (for soaking dried shiitake mushroom)

  • 1/4 cup Vinegar of your choice (I used balsamic vinegar)

  • 1/4 cup Soy sauce

  • 2-3 Tbsp Sweetener of your choice (I used brown sugar)

  • 3-5 Sliced ginger(optional)

  • 1-2 Whole chili(optional)

Instructions

  1. Soak shiitake mushroom in water for overnight.

  2. Put all the ingredients in a pot including the liquid that soaked mushroom. (slice mushroom if you want)

  3. Bring it to boil and simmer for 15 min and let it cool.

NOTE

  • Great topping for ramen!

  • Leftover pickled brine can be used again for other pickling or for sushi rice!
